Ingredients:
1 c. sugar
1 c. shortening
1 c. molasses
1 c. hot water
3 t. ground ginger
1 t. allspice
1 t. clove
pinch salt
1 t cinnamon
3 t. baking powder
6 to 8 cups flour
Instructions:
- Stir sugar and shortening to mix. Add molasses and stir. Add water, stirring until shortening melts.
- Sift in dry ingredients, plus 2 cups flour.
- Stir in 4 cups flour, then knead in an additional cup of flour. Continue adding flour until dough is desired stiffness.
- On floured cutting board, roll into 1/2-inch ropes and cut into 1-inch long pieces. (Roll to about a thumb’s width, then cut into pieces the width of two fingers.)
- Place one inch apart on ungreased cookie sheet and chill for 15 minutes.
- Bake at 375 for 10-15 minutes.
Notes: More flour means a harder cookie.
