Ingredients:
2¼ cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. unsalted butter, at room temperature
1c. packed brown sugar
½ c. granulated sugar
2 large eggs
1 ½ tsp. vanilla extract
1 c. milk chocolate chips
1 c. butterscotch chips
Instructions:
- Preheat oven to 375F.
- Put the flour, baking soda, salt and cinnamon in a mixing bowl. Stir with a wooden spoon until well mixed. Set aside.
- Put the butter, brown sugar and granulated sugar in another mixing bowl. Using an electric mixer on high speed, beat together until well-blended and creamy, about 3 minutes. Beat in the egg and vanilla.
- Add the flour mixture and stir with a wooden spoon until blended. Stir in the chips.
- Drop by round tablespoonful of dough onto an ungreased baking sheet. Leave room for the cookies to spread as they bake.
- Bake for 10-12 minutes, until brown around the edges.
- Let cool on the cookie sheet for 1-2 minutes, then move to wired rack to cool.
Notes: original recipe resulted in cookies that were either overcooked or under cooked. Tried upping flour to 2 ½ cups. Next idea is to try a lower temp to widen the acceptable time range.
