Wookie Cookies

Yield: 36 cookies

Ingredients:

2¼ cups flour

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1 c. unsalted butter, at room temperature

1c. packed brown sugar

½ c. granulated sugar

2 large eggs

1 ½ tsp. vanilla extract

1 c. milk chocolate chips

1 c. butterscotch chips

Instructions:

  1. Preheat oven to 375F.
  2. Put the flour, baking soda, salt and cinnamon in a mixing bowl.  Stir with a wooden spoon until well mixed.  Set aside.
  3. Put the butter, brown sugar and granulated sugar in another mixing bowl.  Using an electric mixer on high speed, beat together until well-blended and creamy, about 3 minutes.  Beat in the egg and vanilla. 
  4. Add the flour mixture and stir with a wooden spoon until blended.  Stir in the chips.
  5. Drop by round tablespoonful of dough onto an ungreased baking sheet.  Leave room for the cookies to spread as they bake.
  6. Bake for 10-12 minutes, until brown around the edges.
  7. Let cool on the cookie sheet for 1-2 minutes, then move to wired rack to cool.

Notes:  original recipe resulted in cookies that were either overcooked or under cooked.  Tried upping flour to 2 ½ cups.  Next idea is to try a lower temp to widen the acceptable time range.
