Pumpkin Chili

Yield: 3 pounds of chili

Active Time: 20 minutes     Total Time: 2 hours

Ingredients:

                1.5  pounds ground beef

                1 lb Jimmy Dean Italian sausage

                1 large onion, diced

                2 to 3 c. beef stock

                3 cloves garlic

                2 small apple, diced

                salt and pepper to taste

                1 tp. pumpkin spice

                1 T. garam masala

                2 T. smokey chipotle

1 T. summer savory

                1 T. brown sugar

                1 can (15 oz.) pumpkin puree (not pie filling)

                1 large can (20 oz.?) crushed tomatoes

                1 can beans, rinsed and drained

Instructions:

  1. Brown the meat and add to slow cooker, leaving fat and liquid in the pan
  2. Cook the onions in the same pan until soft. Add to the slow cooker.
  3. Add enough beef broth to barely cover the meat.
  4. Add remaining ingredients and mix well.
  5. Cook in slow cooker on high for 1-2 hours, or on low for 3-4 hours.
