Chicken and Dumplings

Yield: 4 servings

Active Time: 15 minutes     Total Time: 40 minutes

Ingredients:

                1 T vegetable oil

1 lb. chicken breast, cubed

1 ¾ c. water

1 c. milk or cream

1 envelope (1.2 oz) chicken gravy mix

¾ tsp. dried marjoram

½ tsp. salt

1 package (16 ounces) frozen peas and carrots

1 2/3 c. Bisquick

½ c. milk

Instructions:

  1. Heat oil in Dutch oven over medium heat.  Cook chicken in oil, stirring frequently, until golden brown.
  2. Stir in water, milk, gravy mix, marjoram, salt and vegetables.  Heat to boiling.  Reduce heat to a simmer.
  3. Mix baking mix and milk until soft dough forms.  Drop dough by spoonfuls onto chicken mixture (do not drop directly into liquid).
  4. Cook uncovered for 10 minutes, then cover and cook for another 15 minutes
