Ingredients:
6 large eggs, hardboiled
1 c. packed fresh basil leaves
2 T. walnuts
2 T. grated Parmesan cheese
1 garlic clove
1/3 c. light mayonnaise
Instructions:
- Cut the eggs in half. Pop out the yolks into a bowl and set aside. Arrange the whites on a plate, flat side up.
- In a food processor, chop basil, walnuts, Parmesan and garlic. Blend and chop until mostly smooth.
- Add egg yolks and mayonnaise and blend until creamy.
- Pipe or spoon mixture into the egg whites.
Notes: I sprinkled with a little extra Parmesan cheese.
