Pesto Deviled Eggs

Ingredients:      

  6 large eggs, hardboiled

  1 c. packed fresh basil leaves

  2 T.  walnuts

  2 T.  grated Parmesan cheese

  1 garlic clove

  1/3 c. light mayonnaise

Instructions:

  1. Cut the eggs in half.  Pop out the yolks into a bowl and set aside.  Arrange the whites on a plate, flat side up.
  2. In a food processor, chop basil, walnuts, Parmesan and garlic.  Blend and chop until mostly smooth.
  3. Add egg yolks and mayonnaise and blend until creamy.
  4. Pipe or spoon mixture into the egg whites.

Notes:  I sprinkled with a little extra Parmesan cheese.
