Hitachi Bread

Yield: 5-6 slices

Active Time:  15 minutes    Total Time: 4 hours, 30 minutes

Ingredients:

2 c. bread flour

1 tsp. salt

1 ½ tsp. sugar

1 T. cold butter

¾ c. + 2T. cold milk

1 tsp. yeast

Instructions:

  1. In a medium bowl, whisk flour, salt and sugar to blend.
  2. Confirm the bread pan is firmly seated in the bread machine.
  3. Cut the butter into several pieces.
  4. Add the milk and butter to the bread machine.
  5. Add the flour mix.  Do not stir.
  6. Put the yeast on top the flour mix.  Do not stir.
  7. Set the bread machine to setting 1.
  8. Come back in 4 hours, 10 minutes.
  9. Let bread cool on a wire rack for 10 minutes.
  10. Slice and enjoy.

For herb bread, add 1 tsp. each rosemary, oregano and basil with the flour.
