Ingredients:<\/p>\n\n\n\n

\u00bc c. soy sauce<\/p>\n\n\n\n

\u00bc c. mirin<\/p>\n\n\n\n

\u00bc c. sake (or water)<\/p>\n\n\n\n

1 tsp. sugar<\/p>\n\n\n\n

6 eggs<\/p>\n\n\n\n

Instructions:<\/p>\n\n\n\n

  1. In a small saucepan, whisk everything except the eggs.\u00a0 Bring to a boil, whisking occasionally.\u00a0 Simmer for 1 minute, then let cool completely<\/li>\n\n\n\n
  2. Put a steam basket in a pot and fill with water to just below the steamer.\u00a0 Remove the steamer, and heat the water to a boil.<\/li>\n\n\n\n
  3. Fill the steam basket with eggs.\u00a0 When the water is boiling, lower in the steam basket, cover the pan, reduce the heat to medium low, and steam for 7 minutes.\u00a0 Gently rotate every two minutes to center the yolk (optional).<\/li>\n\n\n\n
  4. Immediately move the eggs to an ice bath and let sit for 15 minutes.<\/li>\n\n\n\n
  5. Peel the eggs, dipping into the ice bath to remove the shell pieces.<\/li>\n\n\n\n
  6. Put the eggs in a plastic bag and add the marinade.\u00a0 Seal the bag, removing air.\u00a0 Fold the bag so that the eggs are completely covered by the marinade.<\/li>\n\n\n\n
  7. Refrigerate for 8-48 hours.\u00a0 A longer marinade give more flavor and color, and also more salt.<\/li>\n\n\n\n
  8. When ready to add to ramen, set the bag in hot water for several minutes to warm, then cut lengthwise.<\/li>\n<\/ol>\n\n\n\n
